The 63rd International Congress of Meat Science and Technology, taking place in Cork, Ireland, from the 13th to the 18th of August.

The 63rd International Congress of Meat Science and Technology, taking place in Cork, Ireland, from the 13th to the 18th of August. With over 150 different organisations represented from over 65 countries, this truly embodies an unparalleled global collaboration of the brightest minds in meat science, research and innovation.

We are assembling a Congress with over 500 short papers, all of which are being critically-peer-reviewed. Over 5 exciting days, we have 13 sessions planned, in which scientific, industry and policy experts will be sharing new findings, practical experiences and lessons learned in their respective fields.

These highly stimulating sessions will cover topics from sustainability, production and welfare to meat safety, processing and the effect on health, which will be of direct interest to all stakeholders. In addition to a packed programme on thought provoking topics of global interest, delegates can avail of additional activities including a special symposium on grass fed meat and a pre-congress workshop in Dublin on meat eating quality and the implementation of UNECE standards.

A special issue of the international journal, Meat Science, will be provided to all delegates to celebrate 40 years of publications. We also planned an array of informative and enjoyable technical and scenic tours and all attendees will also experience true Irish culture and hospitality through our exceptional social programme. Cork is ideally located for those wishing to extend their stay and immerse themselves in Ireland's beautiful landscape, excellent food and friendly culture.

Please enjoy the Congress and the city of Cork, the 'Food Capital of Ireland'. We look forward to personally meeting you throughout the days of the Congress.
